Cold Brew Concentrate — Ratios, Dilution and How Long It Actually Keeps
Cold brew is the easiest coffee to make and the easiest to get wrong, because almost every recipe online quotes a ratio without saying whether it is a concentrate or a ready-to-drink brew. Here is how the numbers work, how long the result keeps, and why yours tastes weak.

Cold brew is the most forgiving method in coffee. No temperature to control, no pour to master, no timing window narrower than several hours. You put coarse coffee in water, wait, and filter.
And yet the most common report from people making it at home is that it tastes weak, watery and vaguely disappointing compared with the bottled version.
That is nearly always one problem, and it is arithmetic rather than technique.
The two recipes people confuse
Search for a cold brew ratio and you will find 1:4, 1:5, 1:8, 1:10 and 1:15 all presented as the correct answer. They are not competing recommendations. They are two different drinks, and most recipes fail to say which one they are describing.
Concentrate — 1:4 to 1:5. Brewed strong, kept in the fridge, diluted at the moment you drink it. This is what commercial bottled concentrate is, and it is the more useful thing to make.
Ready to drink — 1:8. Brewed at roughly the strength you will actually drink, filtered, poured. Simpler, but it takes up far more fridge space per serving and it collapses the moment ice enters the glass.
The classic failure is brewing at 1:8, pouring it over a full glass of ice, and wondering why it tastes like coffee-flavoured water. Ice dilutes by a quarter or more as it melts. A ready-to-drink brew has no headroom for that; a concentrate is designed for it.
Weigh both. Coffee is the ingredient people measure in scoops, and a scoop of coarse-ground light roast can hold 30 percent less than the same scoop of fine dark roast. Ratios are by weight, and 1000g of water is 1000ml, which makes the water half easy.
A batch that works
For a standard jug, scaled to whatever container you have:
- 200g of coffee, ground coarse — raw sugar, or breadcrumbs. At or a little past French press.
- 1000g of cold water. That is 1:5.
- Stir once, properly, so no dry clumps are floating. Dry grounds contribute nothing.
- Cover and leave for 14 to 16 hours at room temperature.
- Filter, twice if you want it clean — once through the maker’s own mesh, then through a paper filter if sediment bothers you.
- Refrigerate the concentrate undiluted, in a sealed bottle.
- Dilute in the glass, starting at one part concentrate to one part water or milk.
That yields somewhere around a litre and a half of finished drink from one jug, and the concentrate takes up a third of the fridge space that the equivalent ready-to-drink volume would.
Grind coarse, and why it matters here of all places
Twelve-plus hours of contact means you do not need fine particles to get enough out of the coffee. What fines do contribute is silt, muddiness and a bitter edge that keeps developing while the brew sits — plus a filter that clogs and a decanting step that takes ten minutes.
Grind coarse: raw sugar, visibly chunky.
This is also the one place where grinder quality shows up in a method that otherwise forgives everything. A blade grinder or a worn burr set produces coarse grounds and a cloud of dust at the same time, and the dust is what you taste. Time, temperature, and the point where more stops helping
Extraction continues for as long as coffee sits in water, but not usefully.
- Under 12 hours — sour, underdeveloped, missing the sweetness that makes cold brew worth the wait.
- 12 to 18 hours at room temperature — the window. Round, sweet, full.
- 16 to 24 hours in the fridge — the same window shifted, because cold extracts more slowly. Cleaner and brighter in character, more tea-like.
- Past 24 hours — the gains have stopped. What continues to develop is woody, papery and slightly astringent.
Room temperature is the better default and is what most commercial producers use; refrigerate as soon as you filter. Use the fridge instead if your kitchen runs warm or if you prefer the lighter, more delicate profile — it is a genuine stylistic choice, not a compromise.
The thing that does not work is treating time as a substitute for coffee. A 1:10 brew left for three days is not a concentrate. It is a weak brew with extra woody notes. Strength comes from the ratio; time only decides how completely each gram gives itself up.
How long it keeps, and why dilution changes the answer
Undiluted concentrate: 7 to 10 days, sealed, in the fridge. Best in the first week.
Diluted: 2 to 3 days. Once you cut it with water, it behaves like ordinary brewed coffee — the acidity and dissolved solids that were slowing everything down have been diluted too.
With milk in it: that day.
This is the practical argument for keeping the jug undiluted. One batch of concentrate can become an iced latte on Monday, a hot cup on Wednesday and a tall glass of water-cut cold brew on Friday, and it is still good on Friday. The same coffee pre-diluted would have been past its best by Wednesday.
Store it airtight and in glass or steel rather than under a cloth. Coffee picks up fridge odours faster than almost anything else in there, and an open jug of cold brew next to last night’s dinner tastes like last night’s dinner by day three. Diluting properly
Start at 1:1, concentrate to water or milk, and adjust. Working from a 1:5 concentrate, that lands you around 1:10 in the glass — roughly drip strength.
From there:
- 1:1 over ice — strong, and correct if you like it that way.
- 1:2 — lighter, closer to how most bottled cold brew arrives ready to drink.
- 1:1 with milk — the iced-latte version, and milk carries it better than water does because there is enough concentrate behind it to survive.
- 1:2 or 1:3 with hot water — a hot cup, noticeably smoother and less acidic than the same beans brewed hot.
Two things worth knowing about the hot version. Heat the water, not the concentrate; boiling or microwaving cold brew strips the aromatics and leaves it flat. And account for the ice before you taste — pour over ice, wait a minute, then judge, because the drink you have in thirty seconds is not the drink you will have in five.
Caffeine, honestly
Cold brew is usually described as gentle, and in flavour and acidity that is fair. In dose it is often the opposite.
A concentrate brewed at 1:4 or 1:5 carries a great deal of caffeine per millilitre, and a generous pour diluted 1:1 can easily exceed a normal cup of drip coffee. The smoothness that makes it easy to drink quickly is exactly what makes it easy to over-drink. If a glass leaves you wired, the fix is dilution, not a different bean.
Equipment, or the lack of it
None of the above requires a dedicated device. What purpose-built makers buy you is convenience at volume: a filter basket you lift out in one motion instead of decanting through paper, a vessel sized to a week rather than a day, and a lid that seals. Room temperature or in the fridge?
Both work and they are not interchangeable. Room temperature extracts faster, gives a rounder, sweeter, fuller cup, and is what most commercial producers use — steep it 12 to 18 hours and refrigerate immediately after filtering. The fridge extracts more slowly and more selectively, giving a cleaner, brighter, more tea-like result, and it needs 16 to 24 hours.
