Milk Steaming and Latte Art Basics
Latte art is not a decoration applied at the end. It is the visible evidence that the milk was textured correctly, which is why the drinks that look right also taste sweeter. Here is what the wand is actually doing, the two phases that matter, and why your foam is probably too stiff.

Latte art has a reputation as showing off, and it is worth clearing that up first, because it is the reason a lot of people never bother learning it.
The pattern is not applied to the drink. It is a by-product of the milk being right. Microfoam — milk with air folded into it so finely that it behaves as one liquid — is the only thing that pours a pattern, and it is also the thing that makes a flat white taste sweet and dense rather than hot and bubbly. If your drinks look like a latte from a café, it is because the milk is like the milk from a café. The picture is the evidence, not the goal.
Which means the whole of this is really about one skill: texturing milk. The pouring is the easy half.
What the wand is actually doing
Two separate jobs, in sequence, and almost every home mistake is doing them in the wrong order or at the same time.
Stretching — introducing air. This happens only at the very beginning, with the wand tip barely under the surface, while the milk is still cold. It sounds like a gentle tearing or paper-ripping noise. A few seconds is usually all you need.
Texturing — spinning that air into the milk. The tip goes slightly deeper, the hissing stops, and the milk rotates in a whirlpool that breaks the big bubbles down into ones too small to see. This is the bulk of the steaming time and it is where microfoam is actually made.
Stiff, dry, meringue-like foam is what you get when stretching continues into the texturing phase — the wand keeps pulling air in, and there is never enough spinning time to break it down. That foam cannot be poured. It sits on the milk, separates within seconds, and leaves you with thin milk under a dry cap.
Air first, briefly. Then spin. That sequence is most of the technique.
The temperature ceiling
Stop between 55 and 65°C.
Milk gets sweeter as it heats, because warmth releases its natural sugars — lactose reads as sweetness much more strongly at 60°C than at 5°C. That is the whole reason steamed milk tastes better than warm milk.
Past roughly 70°C, the proteins denature. The foam you built collapses and stiffens, the sweetness goes, and a scalded, slightly eggy flavour arrives that no amount of good espresso will hide. It is not recoverable, and the milk cannot be re-steamed.
The practical version: stop when the pitcher becomes too hot to keep your hand on for more than a second or two. That lands most people in range once they have calibrated it against a thermometer a few times. A stick thermometer clipped to the pitcher removes the judgement entirely and costs very little.
Position, and the whirlpool
Put the tip just under the surface and the pitcher off-centre, so the milk has an axis to rotate around. Dead centre gives you a fountain that churns air straight up instead of folding it in.
The whirlpool is doing real work. As the milk rotates it drags the larger bubbles down through the body of the milk and shears them apart, which is exactly the process that turns foam into microfoam. A pitcher that is not spinning is a pitcher in which the bubbles stay large.
Fill to just below the bottom of the spout. Milk expands as you aerate it, so a fuller pitcher overflows; a much emptier one is too shallow for the tip to sit correctly. This is the practical argument for matching the pitcher size to the drink rather than owning one large one — 150ml of milk in a big pitcher is genuinely hard to steam.
The finish, which people skip
When you stop steaming, you have thirty seconds of usable milk and three things to do in them.
Purge and wipe the wand immediately. Milk baked onto a hot wand is the most stubborn deposit on the machine, and it takes about four seconds to prevent — wipe with a damp cloth, then open the steam briefly to clear the tip. Leave it and you are scrubbing later, and the next drink tastes of the last one. This is the same logic as the rest of the machine’s cleaning routine, and it is the part most often skipped because the drink is sitting right there.
Knock the pitcher on the counter. One firm tap pops the few large bubbles that survived.
Swirl it, hard, until it looks like wet paint. This is the step that separates a poured drink from a spooned one. Swirling folds any foam that has started to separate back into the milk and leaves a glossy, mobile surface with no visible bubbles. If it will not come back together no matter how much you swirl, it was over-aerated — and that is diagnostic information for the next attempt rather than a disaster, because it will still taste fine.
Pouring
Get the milk right and the pour is a short list.
- Start high, with the pitcher spout well above the cup, and pour into the centre. A thin stream from height punches through the crema and mixes into the drink rather than sitting on it. Fill the cup to somewhere around half to two-thirds this way.
- Drop the spout close to the surface. This is the moment the pattern appears — near the surface, the milk stops diving and starts floating on top of the crema.
- Pour faster as you come down. Increasing the flow pushes white milk onto the surface; slowing it lets the pour sink again.
- Finish with a thin stream drawn back through whatever shape you have made.
The first pattern to learn is a heart: pour into the centre from height, drop and speed up until a white disc forms, then lift and draw a thin line straight back through it. A rosetta is the same thing with a gentle side-to-side wiggle before the line is drawn.
The cup matters here more than most people expect. A wide, shallow bowl with a curved interior gives the pattern room to open before it reaches the rim; a tall straight-sided mug drives the milk downwards and buries it. If nothing is appearing no matter what you do with the pitcher, try the same milk in a proper cappuccino cup before concluding it is you.
Milk, honestly
Whole dairy is the easiest thing to texture and the most forgiving. Protein holds the bubble structure, fat stabilises it and carries flavour, and whole milk has enough of both.
Skimmed foams very readily and that is the problem — it produces a lot of dry, airy foam that collapses quickly. Easier to make foam with, much harder to make microfoam with.
Plant milks need a barista edition, and this is not marketing. Those formulations add protein and stabilisers precisely so the milk behaves under a wand. Standard oat or almond milk splits against hot espresso and refuses to hold texture.
Oat barista is the closest to dairy and the one to start with. Soy behaves reasonably. Almond and rice are the hardest, foam poorly and separate most readily.
What to fix first
If your drinks are not working, the order is almost always this.
Too stiff and bubbly — you aerated too long. Cut the hissing phase to two or three seconds.
No foam at all — the tip was too deep from the start, so you never aerated. Bring it up until you hear it tear.
Tastes scalded — you went past 70°C. Stop earlier; it will feel too early at first.
Foam separates before you can pour — over-aerated, and the swirl could not save it. Same fix as the first.
Pattern will not appear despite good milk — pour lower and faster at the end, and check the cup shape.
None of this requires a better machine, and it is worth being clear about that: the milk is a skill, and a modest machine with a working steam wand in trained hands beats an expensive one in untrained hands every time. What is microfoam?
Milk in which the air bubbles are so small and evenly distributed that they behave as a single glossy liquid rather than as foam sitting on liquid. It looks like wet paint and folds over itself when you swirl the pitcher. Microfoam is what pours as latte art, what gives a flat white its texture, and what makes a cappuccino taste sweet and creamy rather than airy. The distinction from ordinary foam is not cosmetic — stiff foam separates from the milk within seconds and leaves you with thin milk under a dry cap.
Where should the steam wand tip sit?
Just under the surface at the start, angled so the milk spins in a whirlpool rather than churning straight up. You want the tip barely submerged for the first few seconds — that is when it draws air in with a gentle tearing sound — then sink it slightly deeper to close off the air and let the whirlpool do the work. Position the pitcher off-centre rather than dead centre, because a whirlpool needs an axis to rotate around. Dead centre gives you a fountain.
Do I need to purge the steam wand?
Yes, before and after, every single time. Before, because condensed water sits in the wand between uses and would otherwise go into your milk and dilute it. After, because milk left inside a hot wand bakes on within minutes and becomes the most stubborn deposit on the machine. The full routine takes about five seconds: purge, steam, wipe the wand with a damp cloth immediately, purge again. Skipping the wipe is how wands end up with a permanent crust and how the next drink tastes of yesterday.
Which milk foams best?
Whole dairy milk, comfortably. How much milk should I put in the pitcher?
Fill to just below the bottom of the spout — roughly a third to halfway up a typical pitcher. Milk expands as you aerate it, so a pitcher filled higher will overflow, and one filled too low leaves the wand tip too close to the base to create a whirlpool. Match the pitcher to the drink rather than the other way round: steaming 150ml of milk in a large pitcher is difficult because the milk is too shallow, which is the main argument for owning a small pitcher if you mostly make one drink at a time.
Why does my latte art disappear as I pour?
Almost always because the milk has separated. Foam that is even slightly too stiff sits on top of the milk rather than being part of it, so what leaves the spout first is thin milk that sinks straight through the crema and takes any pattern with it. Swirl the pitcher hard before pouring to fold it back together, and if it will not come back together it was over-aerated. The other common cause is pouring from too high for too long — start high to push the milk under the surface, then drop the spout close to the surface at the moment you want the pattern to appear.
Can I make latte art with a milk frother instead of a steam wand?
Not properly, and it is worth knowing why before you buy one. Automatic frothers and handheld whisks whip air into milk, which makes foam; a steam wand injects air and then uses the steam's momentum to spin it into the milk, which makes microfoam. The first floats on top and the second is integrated. A frother will give you a perfectly pleasant milky coffee and a cap of foam you can spoon, and it will not pour a pattern. If latte art is the goal, the steam wand is not an optional part of the machine.
